Chopped Greek style salad

I love trying out new salads. Ottolenghi’s lentil and herb salad is one of my favourites but I’ve wheeled it out time and time again, so, I decided it was high time to find a new salad. Scouring the internet I discovered this chopped Greek salad recipe from Pinch of Yum, and I’d definitely recommend it as a go to salad mix.

The title ‘chopped Greek salad is perhaps a little misleading as it’s missing the salty feta you’d expect to find in a Greek style salad – I made up for this by serving it alongside Hugh’s red peppers stuffed with new potatoes, pesto and feta, but if you want to add feta to the salad I don’t see why you shouldn’t.

The salad and peppers complimented each other and made for a very tasty, filling and reasonably healthy supper, which we’ll be having again sometime.

The verdict from the cook: ‘I’ll definitely be making this again. It’s a deliciously crunchy and fresh salad that would work well with most things. I ate left overs the following day and popped some feta in for a more authentic Greek salad. Highly recommended.’
