Mexican-style roasted veg ragu

Mexican style ragu

This Mexican-style roasted veg ragu from Jamie Oliver is delicious. It’s a try-bake, so once you’ve done all your chopping and prep work and got it started in the over, it pretty much looks after itself, with an occasional stir to help it on its way. Continue reading

Quorn lasagne

Quorn lasagne

It’s very rare that I only have to cook one meal for all three of us to sit down and eat at the same time. Chickpeas and spinach

So, finding myself with nothing to cook for dinner and needing something in a hurry, I had a quick look for something to make with spinach and chickpeas, and happened upon this simple, but every so tasty recipe for spinach and chickpea curry from those lovely people at BBC Good Food.
