I’ve always got an abundance of chickpeas and spinach hanging around the house. Spinach, because I use it most mornings when I make a green smoothie, and chickpeas, because they’re always good to have around. So, finding myself with nothing to cook for dinner and needing something in a hurry, I had a quick look for something to make with spinach and chickpeas, and happened upon this simple, but every so tasty recipe for spinach and chickpea curry from those lovely people at BBC Good Food.
It’s super quick to make, taking less than 15 minutes to throw together, and a large dollop of mango chutney, it made a cheap and tasty supper for the husband and myself. The recipe doesn’t specify which curry paste to use, and as we had some rogan josh left over from cooking Jamie Oliver’s cauliflower and butternut squash curry, I used that, and it worked well.
The verdict from the cook: ‘If I’m honest, I didn’t have high expectations for the curry being that tasty, but it definitely surpassed, and this recipe is going to the top of list of super quick and easy meals.’
