I love dhal. Every time I see a dhal recipe I feel compelled to give it a go. That was before I discovered Anna Jones’ dhal with crispy sweet potato and quick coconut chutney from her book a modern way to eat. It’s the pot of golden dhal at the end of my dhal searching rainbow.
The addition of a can of coconut milk gives the dhal a deliciously creamy lift and the crispy sweet potatoes are an inspired extra. I love it, and so does the husband. Unsurprisingly, the toddler won’t even entertain a teeny tiny spoonful – but I don’t care. It means all the more for us!!
While the quick and easy coconut chutney is rather good, the dish doesn’t suffer if you don’t have any desiccated coconut to hand. I serve this with chapattis (charred on the gas hob – something I also learned from Anna Jones – poppadoms and mango chutney.
The verdict from the husband: He took leftovers to work and was the envy of the staff room – apparently.
