A lot of my favourite recipes come from a chance glance on the internet, and this honey, ginger, tofu and veggie stir fry from Pinch of Yum is one such recipe.
Though some people may not be a fan of the veggie staple tofu, I love it. But it has to be cooked right and accompanied by a BIG kick of flavour – and this honey and ginger ‘sauce’ delivers on all accounts.
A top tip for anyone cooking tofu, make sure you get as much liquid as possible out of the protein before you cook it. The husband’s preferred technique is sticking it under a couple of cookbooks to squeeze out the water, and these are our current books of choice, but any heavy cookbook will do!!
And, something else to consider if you fancy a slightly crispy coating to your tofu, dust it in corn flour before frying. I think I nicked that idea from Yotam Ottolenghi – thanks.
While the recipe only includes asparagus and carrots, I like to add a few more of my favourites; tender-stem broccoli and mange tout. I stuck with green veg because it makes for a fresh, healthy looking dish, but you could add whatever you like.
Aside from a bit of blitzing and tofu frying, this is a pretty quick recipe to throw together and it tastes amazing.
